Our wines
The wine production of Azienda Agricola Ruffano is simple and authentic: a white, a red and a straw wine, the latter a real gem of our winery, with moscato and malvasia dried naturally thanks to the warm climate of the place. The straw wine has an amber color and notes of honey, almonds, candied citrus and hazelnuts.
It is perfect with aged cheeses and traditional almond desserts.
The PGI Ruffano Bianco and Rosso wines are produced following traditional and organic methods, with obsessive attention to cleanliness in the winery.

The wine cellars are located underground, in natural caves that always maintain the perfect temperature for the cellaring of wines.
These caves were dug by hand. Today, they are yet another reminder of the passion of the Ischitan people who came before us.
About 12,000 bottles of wine are produced every year.

How do we produce our wines?
We do not use any agrochemicals on our vines, applying only sulfur powder to protect the plants.
At the Ruffano Estate, grapes are hand-picked in crates with a maximum weight of 18 kg. To determine the best time for harvesting, we collect samples to check sugar content, total acidity and the weight of a single bunch. In addition, a technical sensory evaluation of the grape is conducted to determine the ideal time to harvest.
The bunches undergo gentle crushing, protected from oxygen, followed by clarification of the free-run must, which is done by static sedimentation at low temperature.

Next, fermentation of the grapes takes place in temperature-controlled steel vats.
A long aging period of several months follows. Once chemical and physical stability is achieved, the wine is bottled in the absence of oxygen. The temperature in our cellars is monitored every day to ensure optimal conditions for the aging of the wine, even in the bottle.
This approach preserves the authenticity and purity of our wines.
